- 4 cod fillets (5 oz each)
- half cup panko breadcrumbs
- quarter cup grated parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian seasoning
- half teaspoon onion powder
- Salt and black pepper to taste
- 1 cup cherry tomatoes, halved
- Fresh basil for garnish
- Panko breadcrumbs create a much crispier crust than regular breadcrumbs
- Do not skip the parmesan as it binds the crust and adds incredible flavor
- Check fish at 12 minutes as thinner fillets cook faster
- Squeeze fresh lemon over the top right before serving for brightness
